Sous Chef with progression to Site Head Chef
Mamuśka! Polish Kitchen and Bar is the most-loved Polish restaurant and bar in London and we are getting more popular and busier all the time here at our 250 seat flagship location in Southbank Waterloo. Meanwhile, our Head Chef has been running the show for 14 years here at Mamuska Restaurants Limited and needs a great Sous Chef to be his ‘right hand’ while he is working on the expansion.
This is a hands-on role and you will be performing chef duties, while taking responsibility for the management of various team members and functions. We are looking for a professional chef who can manage a team and who can lead them from the front, producing amazing Polish food in large quantities one day and who is equally comfortable being amazingly fast on the line, serving up a meal every 30 seconds when working on one of our busier shifts.
We are positioned for further growth in 2025 and our very strong kitchen team know their jobs and have a great team spirit. The missing link is someone who can provide consistency and continuity for the day to day operation when the Head Chef is off-site.
The management duties include production planning, scheduling, shift supervision, ordering, event planning and more. We are looking for a chef with strong technical skills and who wants to continue to learn how to run a large kitchen in a popular venue, including all the man-management skills that this involves.
Our new Sous Chef will need to know Polish cuisine very well and speak a good level of English so that you can deal with suppliers and colleagues from across London’s various linguistic communities. We are looking for a chef:
- who leads from the front is not afraid to take charge while working hard themselves,
- whose main focus is on food taste and authenticity, food safety and kitchen cleanliness,
- who pays keen attention to health and safety,
- who can deliver on portion control methods,
- who is organised and can schedule orders and food production,
- who has outstanding speed, especially on the line,
- who will be diplomatic and ethical while executing strong person-management.

Sous Chef Salary:
£43,000 – £46,000 per annum (including service charge)
